Ian Cofer is a new chef from San Antonio, Texas. He displayed some prepared food from the restaurant on New Mexico Living.
Ingredients: Seared Day Boat Scallops
- 2 lbs fish bones boiled and rinsed.
- 1 white onion
- Quartered 1 head fennel
- Quartered 2 large carrots
- Peeled and chopped peppercorn
- Bay leaf
Recipe: Saute veggies with bones till soft, add tomato paste and continue to cook about two minutes. Next cover with water or stock of choice, bring to a boil and simmer. Once reduced, blend to with fine consistency while adding one pound of cubed butter. strain and your done.
