MAS Tapas y Vino showcases Gambas con Chorizo dish

MAS Tapas y Vino and Ibiza Rooftop Lounge offer a tasty pairing of cocktails and delicious food. Both Executive Chef Marc Quinones and Mixologist Arcy Law appeared on New Mexico Living and spoke about the restaurant and the lounge.

Chef Quinones cooked up a delicious dish Gambas con Chorizo with tasty jumbo shrimp. Arcy’s cocktail, “The Abyss”, has lime, violet, Aperol, and gin. It’s sort of a purple drink using a spry side gin so it will have a slight saline taste.

Chef Quinones’ Gambas con Chorizo recipe: 

  • 5 jumbo shrimp 2 oz’s Spanish chorizo
  • 1 tbsp smoked hot paprika
  • 1 tsp fresh garlic
  • 1tsp fresh oregano
  • 1 cup of chicken stock
  • 1tbsp salted butter
  • Fresh sourdough baguette
  • 1 tbsp Spanish olive oil.
