Locally owned and operated Taco Cabana offers authentic and fresh Mexican food every day at an affordable cost at their six locations in Albuquerque.
With options like chile rellenos, carne adovada, posole, green chile stew, and barbacoa, Taco Cabana makes it easy to enjoy delicious Mexican and New Mexican cuisine at any time. They also offer homemade flour tortillas to make your own tacos and burritos at home.
Restaurant owner Ed Rodriguez and Chef Gonzalo visited the set to show off their expertise cooking carne adovada. Their recipe calls for the following:
- 10 lbs diced pork
- 3.5 lbs red chile
- 2.05 oz chicken base
- 1.68 oz salt
- 1.15 oz garlic
- .32 oz pepper
- .75 oz cumin
- 4 bay leaves
- 1 oz oregano
Chef Gonzalo adds the meat to a large pot adding red chile and water. He then lets the meat simmer over a low flame for about 30 minutes before adding the additional ingredients.
Taco Cabana’s patio is open until midnight Sunday through Thursday and until 2 a.m. Friday and Saturday. The restaurant’s drive-thru window is open 24/7.
