The New Mexico State University Cooperative Extension is providing the people of New Mexico with practical research-based knowledge and programs to improve their quality of life.
It’s chile roasting season and Family and Consumer Sciences Agent Cindy Davies gave a few quick tips on how to can, freeze and dry chile. One of the big things that people should do is label everything. Make sure that the cans or freezer bags of stuff have the proper name, that way a few months down the road, you’ll know what it is.
Davies also suggests that if you don’t have enough freezer room for chile, you might want to suggest using a dehydrator for the chile.
