Offering vegan food to go, Vegos specializes in New Mexican comfort foods that are entirely plant-based.
While living in Healy, Alaska, owner of Vegos, Elizabeth Bibiano and her husband decided to challenge themselves to go a month without buying meat as it was costly and their nearest grocery store was two hours away. After thriving on their vegetarian diet, the two researched the industry and continued to eat meat-free.
Now living in Albuquerque, Bibiano incorporated New Mexican cuisine into her lifestyle, now creating delicious vegan cuisine for the public. While on the set, Bibiano shows off several of classic New Mexican recipes with her vegan twist including green chile “chicken” enchiladas that features tofu as a meat substitute.
Vegos also offers a tofu scramble with papas in addition to a Mexican fried rice and red chile jackfruit tamale. Bibiano says their menu is always expanding and they also take custom orders.
