Santa Ana Cafe prepares Tamaya honey ice cream ahead of Duke It Out competition

The Santa Ana Cafe offers indigenous influenced casual American cuisine in addition to New Mexican classics, and vegetarian and gluten-free options. The cafe is located inside the Hyatt Regency Tamaya Resort and Spa.

Chef Noe Gomez-Medina with the Santa Ana Cafe will be competing in the Duke It Out competition which benefits El Ranchito de los Ninos. The event will feature nine of Albuquerques best chefs as they compete for top honors.

Tamaya Honey Ice Cream Recipe


  • 2 quarts, 8 ounces of heavy cream
  • 21 ounces of egg yolks
  • 1/2 ounce of sugar
  • 1 vanilla bean
  • 1/2 cup honey

Combine sugar, honey, cream and vanilla bean and whisk until boiling. Remove from heat and temper in egg yolks. Return to heat until custard has thickened slightly and put in ice cream maker and make according to manufacturers directions.

Biscuit-Chito Recipe


  • 3 cups of flour
  • 66 grams of sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 170 grams of butter, cubed
  • 1 cup buttermilk
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 teaspoon cinnamon
  • 2 teaspoon anise
  • 1/4 teaspoon cayenne
  • 1 tablespoon anise liquor

Mix together dry ingredients. Mix together wet ingredients. Add the cubed butter to dry and incorporate until mealy. Mix both bowls until barely incorporated. Finish on bench and shape, making 12 biscuits. Bake at 425 degrees for 12 minutes.

Basic Brittle recipe


  • 1 1/2 cup sugar
  • 1/2 cup corn syrup
  • 1/2 cup pinon toasted
  • 1 tablespoon lavender, crushed

Coat the baking sheet with pan spray. Boil sugar and corn syrup until it turns golden around the edges. Brush sides to keep crystals from forming. Stir in pinon and lavender. Pour on a baking sheet, let it cool, then break into shards.
