There is just one day left before the Duke It Out Competition in Albuquerque in which nine different chefs will compete for top honors. Chef Shawn Weed from Paako Ridge is one of this year’s competitors.
Chef Shawn demonstrated how to make a simple Chimayo chocolate fondue recipe.
Chimayo Chocolate Fondue
- 1/2 cup heavy cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 cup dark chocolate morsels
- 1/4 teaspoon Chimayo red chile powder
*This recipe can also be dairy-free by substituting coconut or almond milk
Place heavy cream, vanilla, chile, and sugar in a microwavable bowl and microwave until heavy cream is just bubbly and hot. Add the cup of chocolate morsels into the cream and let sit for 3 minutes.
Whisk or stir the melted chocolate mixture until smooth and delicious. Serve with your favorite berries, pretzels, or cake. Refrigerate any leftovers and warm it up for morning coffee.
Duke It Out takes place on Wednesday, September 25, 2019, from 5 p.m. to 8 p.m. at Builders Source Appliance Gallery. Premium event tickets cost $50 while VIP tickets are $100 and include an upgraded gift bag and early entrance.
Attendees can vote for their favorite cuisine while sampling each restaurant’s signature dish.
